  • 3 cups grated zucchini
  • 3/4 cup unsalted butter, melted
  • 2 3/4 cups all-purpose flour

  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup walnuts (optional)
  • 1 cup raisins or dried cranberries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin pan.
  2. In a large bowl, beat eggs until frothy; add sugar and vanilla, mixing well. Stir in zucchini and melted butter.
  3. In another bowl, combine flour, baking soda, baking powder, spices, and salt.
  4. Gradually add dry ingredients to the wet mixture; mix until just combined. Fold in walnuts or cranberries if desired.
  5. Fill muffin cups above the rim for domed tops. Bake for 22 to 30 minutes until golden brown and a toothpick comes out clean.
  6. Cool on a wire rack before serving.
