  • 2 lbs chicken thighs (or breasts), cut into 1" cubes
  • 2 tbsp cornstarch
  • 1 cup water
  • 1/3 cup brown sugar
  • 1/3 cup low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1/2 tbsp fresh ginger, minced
  • 1 tbsp honey
  • 1/2 tsp sesame oil
  • Sesame seeds and chopped green onion for garnish

Instructions

  1. Prepare the teriyaki sauce by combining cornstarch and water in a small bowl. In a saucepan, mix brown sugar, soy sauce, garlic, rice vinegar, ginger, honey, sesame oil, and the cornstarch mixture over medium heat until thickened. Cool completely.
  2. Marinate the chicken in half of the cooled teriyaki sauce in a ziplock bag for at least 30 minutes.
  3. Preheat your grill to medium heat. Thread marinated chicken onto skewers and grill for about 20-30 minutes, turning every few minutes and basting with remaining teriyaki sauce until cooked through (165°F internal temperature).
  4. Serve hot with sesame seeds and green onions.
