Ingredients
- 2 lbs chicken thighs (or breasts), cut into 1" cubes
- 2 tbsp cornstarch
- 1 cup water
- 1/3 cup brown sugar
- 1/3 cup low-sodium soy sauce
- 2 cloves garlic, minced
- 1 tbsp rice vinegar
- 1/2 tbsp fresh ginger, minced
- 1 tbsp honey
- 1/2 tsp sesame oil
- Sesame seeds and chopped green onion for garnish
Instructions
- Prepare the teriyaki sauce by combining cornstarch and water in a small bowl. In a saucepan, mix brown sugar, soy sauce, garlic, rice vinegar, ginger, honey, sesame oil, and the cornstarch mixture over medium heat until thickened. Cool completely.
- Marinate the chicken in half of the cooled teriyaki sauce in a ziplock bag for at least 30 minutes.
- Preheat your grill to medium heat. Thread marinated chicken onto skewers and grill for about 20-30 minutes, turning every few minutes and basting with remaining teriyaki sauce until cooked through (165°F internal temperature).
