  • 1 pound lean ground beef
  • 15 ounces canned black beans (drained and rinsed)
  • 8 ounces canned corn (drained)
  • 2 cups halved cherry tomatoes
  • 2 cups shredded Fiesta blend cheese
  • 16 ounces Catalina dressing
  • 9 ounces Nacho Cheese Doritos (crushed)
  • 2 cups shredded iceberg lettuce

Instructions

  1. Cook rotini pasta in boiling water according to package directions; drain and rinse with cold water.
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain grease and mix in taco seasoning with water.
  3. In a mixing bowl, combine cooked rotini, seasoned beef, black beans, corn, cherry tomatoes, and cheese.
  4. Whisk together Catalina dressing and sour cream; mix into the pasta mixture until well combined.
  5. If serving immediately, fold in crushed Doritos and lettuce; garnish with cilantro.
  6. For make-ahead preparation, refrigerate without toppings; add them just before serving.
