  • 100 grams unsalted butter
  • 40 grams powdered sugar
  • 1 egg
  • 40 grams almond flour
  • 200 grams all-purpose flour
  • 375 ml full-fat milk
  • 3 egg yolks
  • 150 grams granulated sugar
  • 500 grams fresh rhubarb

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Cream together butter and powdered sugar. Add egg, almond flour, salt, and all-purpose flour until dough forms.
  3. Roll out dough and fit into a tart pan; prick the bottom with a fork. Bake for 15 minutes until lightly golden.
  4. For the custard filling, whisk milk, vanilla extract, egg yolks, granulated sugar, and cornstarch in a saucepan over medium heat until thickened.
  5. In another saucepan, cook rhubarb with water, sugar, lemon juice, cinnamon stick, and star anise until tender.
  6. Pour custard into cooled crust; top with rhubarb compote. Chill before serving.
