Ingredients
- 100 grams unsalted butter
- 40 grams powdered sugar
- 1 egg
- 40 grams almond flour
- 200 grams all-purpose flour
- 375 ml full-fat milk
- 3 egg yolks
- 150 grams granulated sugar
- 500 grams fresh rhubarb
Instructions
- Preheat the oven to 180°C (350°F).
- Cream together butter and powdered sugar. Add egg, almond flour, salt, and all-purpose flour until dough forms.
- Roll out dough and fit into a tart pan; prick the bottom with a fork. Bake for 15 minutes until lightly golden.
- For the custard filling, whisk milk, vanilla extract, egg yolks, granulated sugar, and cornstarch in a saucepan over medium heat until thickened.
- In another saucepan, cook rhubarb with water, sugar, lemon juice, cinnamon stick, and star anise until tender.
- Pour custard into cooled crust; top with rhubarb compote. Chill before serving.
