  • 1 green onion, sliced
  • 2 tablespoons gochugaru (Korean chili flakes)
  • 3 tablespoons rice vinegar
  • 3 garlic cloves, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 tablespoon sesame seeds

Instructions

  1. Using chopsticks as a guide, slice each cucumber diagonally to create an accordion effect without cutting all the way through.
  2. Flip the cucumber and cut straight down to form spirals. Repeat with all cucumbers.
  3. Place spiraled cucumbers in a bowl, sprinkle with salt, toss gently, and let sit for 15 minutes.
  4. Rinse cucumbers under cold water and pat dry.
  5. Add minced garlic, green onion, rice vinegar, gochugaru, sesame oil, sugar, and sesame seeds to the bowl; mix gently.
  6. Taste and adjust seasoning if needed before serving.
