  • 2 pounds yellow squash (sliced)
  • 1/4 cup butter
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • 1 large egg (beaten)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup butter crackers (finely crushed)
  • 3 tablespoons melted butter

Instructions

  1. Sauté onions in a large pan with melted butter until soft.
  2. Add sliced yellow squash and cook until tender.
  3. Drain excess moisture using a colander lined with a towel.
  4. In a mixing bowl, combine drained squash mixture with seasonings, sour cream, beaten egg, cheddar cheese, and half the Parmesan.
  5. Mix crushed crackers with melted butter and remaining Parmesan for the topping.
  6. Transfer the squash mixture to a greased baking dish and top with the cracker mixture.
  7. Bake in a preheated oven at 350°F for about 25 minutes until golden brown.
