  • 1 ½ cups banana puree (about 3 large ripe bananas)
  • 1/3 cup melted butter or coconut oil
  • ½ cup granulated sugar (light brown, coconut, or white)
  • 3 large eggs
  • ½ cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free all-purpose flour
  • 1 cup blanched almond flour
  • ½ cup vanilla protein powder
  • 3 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ¾ cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a greased and lined 9×5 loaf pan.
  2. In a mixing bowl, puree bananas until smooth. Add melted butter, eggs, Greek yogurt, and vanilla; whisk until combined.
  3. In another bowl, combine gluten-free flour, almond flour, protein powder, baking powder, cinnamon, and salt.
  4. Gradually add dry ingredients to wet ingredients; mix until just combined.
  5. Fold in optional chocolate chips gently.
  6. Pour batter into the prepared loaf pan and bake for 55–65 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack.
