- 3 fresh peaches
- 1 ½ cups all-purpose flour

- 2/3 cup granulated sugar
- 1/3 cup unsalted butter (room temperature)
- 1 large egg (room temperature)
- 1 teaspoon pure vanilla extract
- ½ cup buttermilk (room temperature)
Instructions
- Preheat the oven to 350°F (177°C) and prepare a non-stick muffin pan.
- In each muffin cup, place a piece of cold butter, sprinkle with brown sugar, and layer peach slices at the bottom.
- Prepare the cake batter by mixing flour, baking powder, baking soda, and salt in one bowl and creaming sugar and room-temperature butter in another.
- Combine ingredients gradually, adding in buttermilk and cubed peaches last.
- Pour batter into muffin cups and bake for 25-30 minutes until golden brown.
- Allow to cool slightly before inverting onto a wire rack.
