  • 3/4 cup granulated sugar (155 grams)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt (optional)
  • 2/3 cup unsalted butter, melted (150 grams)
  • 2 cups fresh peaches, peeled and diced (450 grams)
  • 2 tablespoons granulated sugar (30 grams)
  • 2 teaspoons cornstarch
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (177°C). Grease an 8-inch square baking dish and line with parchment paper.
  2. In a bowl, combine diced peaches with lemon juice, almond extract, cornstarch, and sugar; set aside.
  3. Mix flour, oats, sugar, cinnamon, salt (if using), and melted butter in a separate bowl until crumbly.
  4. Press two-thirds of the mixture into the prepared dish to form the base layer.
  5. Spread peach mixture evenly over the crust.
  6. Sprinkle remaining crumble mixture on top; press lightly to adhere.
  7. Bake for 33–35 minutes until golden brown. Allow to cool completely before slicing into bars.
