  • 1 tablespoon olive oil
  • 1 pound kielbasa, cut into ½ inch pieces
  • 2 garlic cloves, minced
  • ½ cup yellow onion, finely diced
  • ½ cup carrots, peeled and finely diced
  • ½ cup celery, finely sliced
  • 4 cups chicken stock
  • 1 ½ pounds potatoes, cut into cubes
  • 2 cups heavy cream (or whole milk)
  • 2 cups shredded cheddar cheese
  • ½ cup shredded parmesan cheese
  • Kosher salt and black pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Add kielbasa and cook until crispy (about 5-6 minutes). Remove with a slotted spoon.
  2. Sauté garlic, onion, carrots, and celery in the same pot for about 2 minutes until fragrant.
  3. Add chicken stock and cubed potatoes; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until potatoes are tender.
  4. Stir in the cooked kielbasa, heavy cream, cheddar cheese, parmesan cheese, salt, and pepper. Cook on low heat for an additional 5-10 minutes until cheeses melt.
  5. Stir in chopped parsley before serving.
