Instructions
- Preheat your oven to 350°F. Line a 9" x 5" loaf pan with parchment paper or spray it with cooking spray.
- In a large bowl, mash the bananas until smooth. Mix in the grated zucchini, egg, oil, maple syrup, and vanilla extract.
- In another bowl, combine the cinnamon, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients.
- Gently fold in the whole wheat flour until just combined; avoid overmixing.
- Pour the batter into the prepared loaf pan and level it off. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Allow cooling in the pan for about 10 minutes before transferring to a cooling rack.
