  • 2 medium zucchinis
  • 2 cups cherry tomatoes
  • 8 oz (220g) fusilli pasta
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1/4 cup vegetable stock
  • 1 cup grated parmesan

Instructions

  1. Cook the pasta in boiling salted water until al dente; drain.
  2. In a large skillet, heat olive oil over medium heat. Sauté diced zucchini until golden; remove from skillet.
  3. In the same skillet, add cherry tomatoes, garlic powder, black pepper, fennel seeds, cayenne pepper (if using), and vegetable stock. Cover and cook until tomatoes blister.
  4. Add sautéed zucchini and cooked pasta to the skillet; stir in parmesan and combine well.
