  • 1 tablespoon olive oil
  • 1 medium onion (chopped)
  • 3 sticks celery (chopped)
  • 4 cloves garlic (minced)
  • 1 pound lean ground beef
  • 3 tablespoons flour
  • 1 (6 ounce) can tomato paste
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Italian seasoning
  • 2 Russet potatoes (peeled & diced)
  • 4 medium carrots (peeled & sliced)
  • Salt & pepper to taste

Instructions

  1. In a large soup pot, heat olive oil over medium-high heat. Sauté onion and celery for 5–7 minutes until softened.
  2. Add minced garlic and cook for another 30 seconds.
  3. Stir in ground beef, breaking it apart as it cooks until browned (about 8 minutes).
  4. Sprinkle flour over the beef mixture and stir for 1–2 minutes.
  5. Mix in tomato paste until well combined.
  6. Pour in beef broth along with Worcestershire sauce, Italian seasoning, potatoes, and carrots. Bring to a boil; then reduce to a simmer for at least 30 minutes or until vegetables are tender.
  7. In the last few minutes of cooking, add frozen peas if desired and season with salt and pepper before serving hot.
