  • 15 oz black beans (rinsed and drained)
  • 1 ½ cups canned corn (drained)
  • 1 medium jalapeño pepper (seeded and diced)
  • 1 small red bell pepper (seeded and diced)
  • 3 green onions (sliced)
  • ¼ cup fresh cilantro (chopped)
  • 1 tbsp taco seasoning
  • ½ tsp ground cumin
  • 9.75 oz Chili Cheese Fritos (reserve some for topping)
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ¼ cup fresh lime juice
  • 2 tbsp chipotle sauce

Instructions

  1. In a large bowl, combine the coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and cumin. Toss until well mixed.
  2. In a separate bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
  3. Pour the dressing over the salad mixture and stir gently to coat all ingredients evenly.
  4. Fold in most of the Chili Cheese Fritos for crunch; reserve some for topping.
  5. Before serving, sprinkle the reserved Fritos on top for added texture.
