  • 2 tablespoons unsalted butter
  • 1 large onion, thinly sliced
  • 4 slices of sturdy bread (sourdough, whole wheat, or white)
  • 2 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 cups shredded Gruyère cheese
  • 2 cups shredded Swiss cheese
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, melt 1 tablespoon of butter. Add sliced onions and cook for 10–12 minutes until golden brown. Season with salt and pepper.
  2. Spread mayonnaise on one side and Dijon mustard on the opposite side of each bread slice.
  3. On the mustard side, layer half of the Gruyère and Swiss cheese. Add caramelized onions and top with remaining cheese. Close sandwiches with mayonnaise sides facing outward.
  4. Melt remaining butter in the skillet over medium heat and grill sandwiches for 4–5 minutes per side until golden brown and cheese is melted.
