  • 1 pound lean ground beef
  • 1/2 medium onion (chopped)
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 2 cups crushed Doritos (Nacho Cheese flavor)
  • 1 (14 oz) can black beans (drained & rinsed)
  • 1 (12 oz) can corn (drained)
  • 1 (15.5 oz) jar salsa
  • 2 cups shredded Mexican cheese blend (divided)

Instructions

  1. Preheat oven to 350°F.
  2. In a skillet over medium-high heat, add olive oil and ground beef. Cook for about 5 minutes until browned.
  3. Stir in chopped onion, chili powder, garlic powder, and cumin; cook until onions are soft.
  4. Spread crushed Doritos evenly in a 9×13 casserole dish.
  5. Drain excess fat from the skillet and mix in black beans, corn, salsa, and half of the cheese until warmed through.
  6. Layer the beef mixture over the Doritos and top with remaining cheese.
  7. Bake uncovered for 15-20 minutes until bubbly and golden.
  8. Serve hot with your choice of toppings.
