  • 1 fresh pineapple (or canned rings)
  • 2 lbs boneless chicken thighs (or breasts)
  • 1/2 cup coconut aminos (or soy sauce)
  • 1/4 cup pineapple juice (or water)
  • 1/4 cup tomato paste
  • 46 pitted dates (or 1/4 cup maple syrup)
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp smoked paprika

Instructions

  1. Soak dates in warm water for 10-15 minutes until soft; drain.
  2. In a blender, combine dates, coconut aminos, pineapple juice, tomato paste, garlic powder, chili powder, and smoked paprika; blend until smooth.
  3. Place chicken in a shallow dish and pour marinade over it; toss to coat. Cover and refrigerate for at least 30 minutes or up to 24 hours.
  4. Preheat grill to high heat (500°F). Grill marinated chicken and pineapple for 5-6 minutes per side until cooked through (chicken should reach an internal temperature of 165°F).
