  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 1 cup sweet corn
  • 3 cloves garlic, minced
  • 2 cups mild roasted Hatch green chiles, chopped
  • 1 quart chicken stock
  • 3 cups cooked shredded chicken
  • 1 can (15 oz) cannellini beans, drained
  • Juice of 1 lime

Instructions

  1. Preheat oven to 400°F. Spread corn tortilla strips on a baking sheet, drizzle with olive oil, and season. Bake for about 15 minutes until crispy.
  2. In a large pot or Dutch oven over medium heat, sauté onion, bell pepper, corn, and garlic in olive oil for 5-6 minutes until softened.
  3. Add roasted green chiles, cumin, paprika, salt, and pepper; stir and cook for another 3-4 minutes.
  4. Incorporate shredded chicken and chicken stock; bring to a low simmer for five minutes.
  5. Blend cannellini beans with water and cilantro until smooth. Stir into the chili until thickened.
  6. Adjust seasoning with lime juice before serving garnished with avocado slices and crispy tortilla chips.
