  • 1 cup uncooked parboiled long-grain brown rice
  • 3 tablespoons fajita seasoning
  • 5 cups shredded chicken
  • 1 can (14 oz) low sodium black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 3 cups reduced sodium chicken broth
  • 1 can (4 oz) mild green chilies
  • 2 tablespoons tomato paste
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat oven to 400°F.
  2. In a 9×13 inch baking dish, mix diced onion, red bell pepper, uncooked rice, fajita seasoning, and cayenne pepper (if using).
  3. In a separate bowl, whisk together chicken broth, mild green chilies, tomato paste, and olive oil.
  4. Pour the liquid mixture over the rice mixture in the baking dish; stir to combine.
  5. Add shredded chicken, black beans, and corn; mix well.
  6. Cover with aluminum foil and bake for 65-70 minutes or until liquid is absorbed.
  7. Remove foil; sprinkle cheese on top and bake uncovered for an additional 5-10 minutes until melted.
