  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • β…“ cup mayonnaise
  • β…“ cup sour cream
  • Zest and juice of 1 large lime
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ΒΌ teaspoon kosher salt

Instructions

  1. In a bowl, mix mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper.
  2. Boil water in a pot and cook the shrimp for about 2-3 minutes until pink.
  3. Prepare an ice water bath; transfer shrimp there to cool for 3 minutes then drain.
  4. Chop shrimp into bite-sized pieces; combine with cucumber, green onion, and dressing in a mixing bowl until well coated.
