  • 16 slices high-quality soft white sandwich bread
  • 1 English cucumber
  • 8 ounces cream cheese (softened)
  • 1/4 cup mayonnaise
  • 1 tablespoon minced fresh dill
  • 1 tablespoon minced fresh chives
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon coarse salt
  • Cracked black pepper (to taste)

Instructions

  1. Remove crusts from the bread slices.
  2. Peel the cucumber in stripes and slice it into thin rounds using a mandolin.
  3. Sprinkle cucumber slices with salt and let them rest on paper towels for 15–30 minutes to remove moisture.
  4. In a mixing bowl, blend cream cheese, mayonnaise, dill, chives, lemon juice, garlic powder, and salt until smooth.
  5. Spread the herbed cream cheese on one side of each bread slice. Layer cucumber slices over half of the slices and season with black pepper.
  6. Top with remaining bread slices, cream cheese side down. Cut each sandwich into quarters to serve.
