  • ¼ cup non-dairy milk (almond or coconut)
  • 1 tablespoon olive or coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini (squeezed dry)

Instructions

  1. Preheat your oven to 400°F and line a muffin pan with liners.
  2. Shred zucchini using a box grater and squeeze out excess moisture.
  3. In a medium bowl, mix almond flour, cocoa powder, baking soda, and salt.
  4. In another bowl, whisk together the egg, maple syrup, applesauce, almond butter, non-dairy milk, oil, and vanilla until smooth.
  5. Combine wet and dry ingredients gently; fold in zucchini and chocolate chips.
  6. Fill muffin cups about two-thirds full and top with extra chocolate chips if desired.
  7. Bake for 22-25 minutes until a toothpick inserted comes out mostly clean. Cool on a wire rack.
