Ingredients
- 1.5 lb boneless, skinless chicken breasts
- 6–8 oz pasta (cellentani, penne, or bowtie)
- 2 heads romaine lettuce (sliced)
- ¼ cup parmesan cheese
- ¾ cup mayonnaise
- 3 Tbsp lemon juice
- ⅓ cup croutons
Instructions
- Cook pasta in boiling water according to package instructions; drain and rinse with cold water.
- Season chicken with salt, pepper, dill, and garlic powder; cook in a greased skillet over medium-high heat until internal temperature reaches 165ºF.
- For the dressing, blend mayonnaise, lemon juice, capers, dijon mustard, Worcestershire sauce, salt, pepper, and water in a food processor until smooth.
- In a large bowl, combine cooled pasta, sliced romaine, parmesan cheese, diced chicken, and three quarters of the dressing; toss well.
- Top with croutons before serving.
