Ingredients

Scale
  • 2 tablespoons butter, melted
  • 1 tablespoon olive oil
  • ⅓ cup balsamic vinegar
  • 2 tablespoons dry white wine (or reduced-sodium chicken broth or water)
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 4 medium yellow onions (about 1 ½ pounds total)
  • 1 bunch fresh thyme leaves

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a baking dish, combine melted butter and olive oil. Whisk in balsamic vinegar, white wine (or broth/water), sugar, salt, and pepper until blended.
  3. Peel the onions, keeping root ends intact, slice them in half from stem to root, and place cut-side up in the baking dish over the glaze.
  4. Cover loosely with foil and bake for 30 minutes.
  5. Remove foil; turn onions cut-side down in the glaze and bake uncovered for another 20–25 minutes until tender and syrupy.
  6. Before serving, turn onions cut-side up and garnish with fresh thyme if desired.
