- 2 (3-oz) boxes Peach Jell-O (not made)
- 4 eggs
- 1 cup oil
- 1 (16-oz) bag frozen peaches (do not thaw)
- 1/2 cup salted butter (1 stick)
- 2 cups brown sugar (packed)
- 2/3 cup heavy cream
- 1 teaspoon vanilla
Instructions
- Preheat oven to 350°F and grease a 9×13 inch cake pan.
- In a large bowl or stand mixer, combine yellow cake mix, peach Jell-O, eggs, and oil; mix well.
- Fold in frozen peach slices cut in half.
- Pour batter into the prepared pan and bake for 40-45 minutes until done.
- Cool completely on a wire rack before frosting.
- For the frosting, heat butter, brown sugar, and heavy cream in a pot until boiling; stir for one minute before removing from heat and adding vanilla.
- Cool frosting in an ice bath until thickened, then beat with a hand mixer until pourable.
